I love making cookies, especially around the holidays! One of my favorite recipes is for is Crackle Top Peanut Butter Cookies! They are so good! They have a great peanut butter taste and are rolled around in sugar before being baked! They are 100 percent homemade and are a huge success every time I make them! My sister in law writes for a local paper and she even did an article on how much she loves them. Like I said they are a big hit! I know many people do cookie exchanges at Christmas time and this would be a wonderful one to make for the holidays or any time of the year!
Cream margarine, 3/4 cup granulated sugar and brown sugar until light and fluffy. Blend in peanut butter, egg, and vanilla. Add combined dry ingredients, mix well. Shape rounded teaspoonfuls of dough into balls, roll in granulated sugar. Place on ungreased cookie sheet. Bake at 375 degrees, 10-12 minutes. Makes approx. 4 dozen

- 3/4 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla
- 1 3/4 cups of flour
- 1/2 teaspoon of soda
- 1/2 teaspoon salt
